Seating The Guest
(W: waiter, G: guest)
W: Good evening, sir. Welcome to African Deck!晚上好,先生.歡迎光臨菲菲酒廊！
G: Good evening,. I’d like a table for 4.晚上好，我要一張四人桌。
W: A table for 4, would you come this way, please? Be careful of the steps.
Would you like to sit here?/ How about this table? 一張四人桌，好的。這邊請，小心臺階。坐這里好嗎？
G: It’s fine, thank you. 好的，謝謝。
W: You’re welcome. Sit down, please. I’ll bring the menu, sir. 不客氣，請坐。我去拿菜單。
注：1 客人到來，首先要打招呼：Good morning/afternoon/evening,, welcome to African Deck !等等的問候語，要讓客人感覺到熱情。
2 若客人未說來客人數(shù)，可主動問詢：How many people do you have?/ How many people are there in your party?（您一行有多少人呢？）等，以便引客入位。
3 引客入座，要走在客人的前方，身體稍側(cè)，隨時注意客人的情況，可提醒：Would you come this way?（這邊請）/Follow me, please. Be careful of the steps.（請跟我來，小心臺階）等
4服務(wù)時注意要使用正規(guī)的口語，對客人勿說，ok, hi ,hello 等比較隨意的用語。
Taking Orders
W: What would you like to drink, sir? 先生，您要喝點什么呢？
G: Give me a Scotch. 給我一份蘇格蘭威士忌。
W: Would you like your Scotch straight up(no ice) or on the rocks(with ice), sir?
您想凈飲還是要加冰塊呢，先生？
G Straight up. 凈飲。
W: would you like anything else? 好的，您還要點別的嗎？
G: Give me some peanuts. 來點花生吧。
W: So, one Scotch without ice and some peanuts, am I right? 一份蘇格蘭威士忌不加冰的和一份花生，對嗎？
G: Yes, thank you.
W: You are welcome. Just a minute, sir. 不客氣，先生請稍等。
注：1 特別注意straight up（凈飲）on the rocks（加冰）這一說法。因客人用得較多，一定要能聽懂。
2 最后來一個確認(confirm)，以免出錯。
3 看到客人引完可問Would you like one more beer, sir?/ Would you like another drink, sir?請問先生還要來一杯嗎？
Serving The Familiar
W: Good evening, Mr. Smith, how are you today? 今天好嗎？
Are you having a good time? 過得開心嗎？
Did you have a good trip? 旅途開心嗎？
How are you doing these days? 最近怎樣？
G: Fine, thanks. 很好，謝謝。
W: So, as usual, Bourbon on the rock? 像往常一樣，波旁加冰嗎？
G: No, this time I want a cup of tonic water. 不，這次我想來一杯湯力水。
W: A cup of tonic water, just a moment, Mr. Smith好的，一杯湯力水.請稍等，史密斯先生。
G: Here you are, your tonic water. Just enjoy it, have a pleasant evening, Mr. Smith.

注：1 熟客見面一定要能叫出客人的名字。按照光臨的密度可使用不同的用語。如：How are you today? 今天好嗎？（最近常來）
Are you having a good time? 過得開心嗎？（可任意使用）
Did you have a good trip? 旅途開心嗎？（得知剛回）
How are you doing these days? 最近怎樣？（有一段時間未見）

Presenting The Bill
New Words: cash現(xiàn)金 bill 帳單 receipt發(fā)票 change找零，改變 credit card信用卡 sign 簽名（動）
Situation One: Pay By Cash(現(xiàn)金付帳)

G: Waiter, the bill, please. 服務(wù)員，結(jié)帳。
W: Yes, sir. 好的，先生。
Here is your check/bill, sir, thank you. 這是您的帳單，先生。謝謝。
G: Here you are. 這里（現(xiàn)金）
W: 200 yuan. Please wait minute. I’ll be back with your changes and receipt.

Situation Two: Pay By credit card(刷卡付帳)
G: Check/take the bill, please. 結(jié)帳。

W; Sure. What kind(of card) do you have, sir? 當然可.請問先生是什么卡呢？

Situation There: Signing The Bill（入房帳）

Asking For Repetition 尋求復(fù)述
禮貌地要求對方重說你沒有聽懂或聽清的話，人們大多是不會介意的，但是注意不要說“What？”“Uh？”等，可以這樣說：
I’m sorry, but I didn’t quite catch you .
抱歉，我沒有聽清楚您剛才說什么。
I beg your pardon?/Pardon?
請原諒，再說一遍好嗎？
Pardon? madam. I’m afraid I didn’t follow you .

Apologizing 道歉用語
在無心的情況下，服務(wù)人員冒犯了客人使客人處于不利或?qū)擂蔚奶幘硶r，要馬上采取措施來補救。補救的第一步就要及時說出一些誠懇的道歉用語，這樣才可能很快達到效果。
1.We’ll try our best to take some measures, so that you will be satisfied. 我們將盡力采取一些措施也許您會滿意一些。
I’m sorry, it’s our fault.
我們將盡力采取一些措施也許您會滿意一些。
I’m afraid I spilled beer on the tablecloth. Would you mind my changing a clean one?

注：以上句型可以靈活組合使用，例如對上錯菜表示抱歉，可以將3、5連起來如：I’m really sorry, but I seem to have misserved a dish. I do apologize for this .I’ll change it immediately.2和1也可以連起來使用。
Asking For Opinions 尋求意見
酒店服務(wù)人員用語一般都是以問句的形式出現(xiàn)，因為這樣比較禮貌，但更重要的是，體現(xiàn)了酒店充分尊重客人的意愿、顧客至上這一原則。
How would you like the your steak? Rare, medium rare or well-done?
您希望您的牛排怎么做？嫩點，適中，還是全熟？
Would you like a drink first?
您要不要先來點飲料呢？
May I take your order, sir?

Expressing Wishes And Congratulations
祝福祝賀語用在適當?shù)臅r候會使客人感覺愉悅，所以學習一些祝賀語是很有必要的。
Usual—used Wishing Expression: 一般祝愿：
